In recent years, more and more foods have come onto the market that are intended to replace animal products. This has also been done with the aim of improving the sustainability of nutrition and positively influencing health. However, the question arises as to whether these alternative or substitute products are actually capable of doing this. This interdisciplinary study highlights the opportunities and risks of replacing meat and dairy products with alternatives that are mostly made from plant-based raw materials. The focus is on the supply of nutrients and the environmental impact. It also analyses how consumers assess the substitute products and how they should be evaluated from an ethical perspective. Furthermore, the legal framework is analysed and the possibilities for agriculture in Switzerland to provide raw materials for the production of alternative products are assessed. Finally, recommendations are presented that are aimed at consumers, the processing industry, professional organisations, politicians and the administration.
